Agar agar, what is it?

Agar agar is a completely vegetable gelling agent ideal for preparing puddings, creams and desserts.

Agar agar is a gelling agent obtained from seaweed and therefore suitable for vegans and vegetarians. It is a very versatile thickener. It is a vegan alternative to gelatin. It is sufficient to mix the agar agar with the chosen liquid and bring it to a boil. Our Agar Agar produces odorless, tasteless, transparent and superior quality gels even at low concentrations. Produces stiff but friable gels that are clear and neutral in flavor. These gels resist acid pH up to 3.5. Agar Agar gels melt in your mouth releasing a fantastic flavour. Agar agar is soluble at about 90-100°C and becomes solid after cooling to about 40-45°C. agar agar gels can be heated up to 85°C without melting. It is used to create mousses and hot creams. It is also appreciated for the preparation of vegan candies and ice creams thanks to its ability to melt in the mouth. Lately it has also been widely used to create balls of which are dropped into hot oil, this technique is improperly called "Spherification" for which instead Calcium Lactate andSodium Alginate are needed. Among the characteristics of our Agar agar stand out that it is: suitable for vegans and vegetarians, GMO-free, gluten-free, non-irradiated, non-bleached. It is often used in conjunction with Xanthan gum to create particular textures

Agar Agar, how to use? How much should it boil?

Agar agar also know as "Agar" is a polysaccharide that is used as a gelling agent and It is obtained from red algae belonging to different genera. It activates once it reaches 95°C dissolved in a liquid. Therefore it will be sufficient for the whole solution to reach 95°C for the agar agar to activate.
