Bicarbonate of Soda

Our Sodium Bicarbonate is a pure powder with an extra-fine grain size, it is without aluminum. It finds its main use in cooking and pastry mixed with Cream of Tartar as a leavening agent. It reacts with the acidic components of the dough, then releases carbon dioxide, which in turn causes the expansion of the dough, creating the characteristic alveolation of pancakes, cakes, fritters and batters. The reaction with acids is caused by phosphates, cream of tartar, lemon juice, yogurt, buttermilk, cocoa, vinegar, etc. Sodium bicarbonate can be used directly as a leavening agent as long as there is sufficient acid in the dough.
