Carrageenan iota produces elastic and clear gels, becomes soluble above 70°C and is widely used, as well as in molecular cuisine, in ice cream, pastry and cosmetics. It reacts differently from Carrageenan Kappa which modifies its behavior depending on the substances it comes into contact with.
