Cream Of Tartar

Our Cream of Tartar is a powder for food use of the highest quality. It is also known as potassium bitrate. It is mainly used in pastry to stabilize soufflés and meringues, adds volume to glazes and prevents whipped cream from falling apart. In meringues a little cream of tartar helps the denaturation of the egg white to incorporate the air more quickly. It is added to Sodium Bicarbonate to create powdered chemical yeast, and prevents the recrystallization of sugar in ice creams. Cream of Tartar prevents the loss of color and shine during the boiling of vegetables. It is also used to make plasticine for children, it is safe and natural.
