Our purified and Demineralized Water is certified for food use. It is refined by osmosis in addition to UV processes at 0.2 microns. It is ideal for all those contexts where the taste of water or its hardness could somehow compromise the final recipe. It has a pH of 7 and is ideal for spherification and reverse spherification for all solutions with alginate that will not react with the calcium present in normal waters.
