What is Soy Lecithin?

Our Soy Lecithin is a very fine powder and an excellent emulsifier. It is also used as a stabilizer and preservative and is highly digestible. It is widely used in the food industry and in molecular cuisine to produce vegan mayonnaise, emulsions, arias and is added to doughs to implement fat absorption and soften the gluten mesh. Soy Lecithin is soluble in oil and in water and is able to bind to air so it can bind air and oil, air and water, water and oil. Suitable for vegans and vegetarians, GMO-free, gluten-free.
