Tapioca Maltodextrin

Zorbit is a powdered maltodextrin obtained from tapioca, has a very low bulk density. It is a carbohydrate made from broken down tapioca molecules. It has a reduced sweetening power and does not add calories to recipes. It can absorb oils turning them into powder. In the food industry it is used as a filler and to stabilize dry mixes. It tastes bland and adds solids to ice cream. Zorbit is a very fine powder and is easily soluble in cold or hot conditions. When mixed with oil in a proportion of 2 parts of Zorbit to 1 part of oil it transforms this into powder. It dissolves completely in contact with aqueous product. It is used in molecular cuisine to prepare both salty and sweet "earths". It is used as a substitute for sugar in salty ice creams or sorbets. Suitable for vegans and vegetarians, GMO-free, gluten-free, Kosher and Halal.
