What is Xanthan? How to use Xanthan Gum?

Our xanthan gum is a very high quality powder. It has a grain size of 200 mesh compared to the standard 80 mesh, it is finer than standard xanthan gum, so it is easier to disperse and dissolve. Xanthan gum is a food additive used as a thickener, stabilizer, emulsifier and foaming agent. It is not counted among the gelling agents. It is used for viscosity control to create easily soluble gels. Added to other hydrocolloids it increases their intensity. Xanthan Gum can be added to Agar Agar and Kappa Carrageenan to form more stable gels, ideal in molecular cooking. The water-holding ability of Xanthan Gum is used to control syneresis and delay the recrystallization of ice. Ideal for pastry fillings, it prevents water from leaking into the fillings, protects the crunchiness of the crust. It is added to ice cream to avoid crystallization. Increase the viscosity of liquids, just add a very small amount. It is usually used at 0.5% or even only 0.05%. It is often found in salad dressings and sauces. Stabilizes the emulsions. Suitable for vegans and vegetarians, GMO-free, gluten-free.

How to produce Xanthan gum?

To make xanthan gum, natural strains of Xanthomonas campestris are used, a natural bacterium. Through this fermentation we obtain the Xanthan which is then purified and ground to obtain the Xanthan Gum. It is a whitish powder soluble in water, but insoluble in alcohol.
